Pineapple in guacamole is so good. Its adds a sweetness you had no idea you needed. Add some crumbles of goat cheese and you now have the most delicious guacamole you didn't know you needed!

Snacking is simply what I’ve been doing best over the past few weeks in quarantine and honestly I ain’t mad about this one!

The delicious guacamole is one of my all time favorites to whip together for a guilt free snack but with a pineapple twist. The salt, lime and avocado mix is the best base of any guac but when you add the sweetness of pineapple, you will find yourself fishing out all the pineapple pieces because you can’t get enough. Paired with the bite of red onion to finish off the guac, this is simply one of the best combos out there.

I always use lime flavored tortillas whenever I eat guac since I am a sucker for chemically created sodium in my foods. But lately I have been needing a bit more health in my life, which brings me to the best tortilla chips ever. Siete Lime flavored tortilla chips. A grain free vegan option that is loaded with real ingredients. I usually find these at Whole Foods but recently I found some at Meijer, so I think this brand is catching on!

A little more snacking with a little less guilt.

I have a huge secret to making the world’s best guac and it’s a simple step when blending everything together. Are you ready to hear this super big secret to making the perfect guac??!

When you’ve peeled all the avocados and put them into a big bowl. Instead of mashing with a masher, I like to use two knives to chop at the avocados. This just makes slices and chunks so small that it’s still somewhat pieces of avocado in the guac and not just a tub of glug. By doing so, you are able to really get a beautiful guac that isn’t too mashed up.

I don’t know, I think it’s a bit genius. However, if you are a fan of completely smashed guacamole by all means, smash away!

Another note to make about this guac. If you are a fan of pineapple, I would recommend getting a whole pineapple and slicing it up to add to the guac. It allows you to get the perfectly sliced small pieces you are looking for and it also will be the freshest juiciest pineapple you can add to your guac. It is a bit simpler to buy the already sliced pineapple at the store, but you never know when that has been sliced and it can get dried out too quickly. Plus, when you buy the whole pineapple, you are getting a lot more for the same price as the already sliced stuff, if not it cheaper! If you are worried about having too much pineapple, don’t! Slice that bad boy, use as much as you want in the recipe and then store the rest in the freezer for smoothies. Or, if you are a fan like me, use it on your next DIY pizza!

Sorry had to say it, pineapple on pizza is the greatest and I don’t care what the world thinks!

If you want to make this guacamole in advance, add a bit more lime juice to help it stop from browning. Then cover with plastic wrap. You can store in the fridge up to 12 hours before it really starts to brown.

Pineapple Guacamole

This guacamole is a twist on a classic. Tossed with some chunks of pineapple for sweetness, then sprinkled with goat cheese for creamy goodness. The perfect duo you never knew existed!

Ingredients

  • 4-6 ripe avocados
  • 2 limes (juiced)
  • 1 small red onion (chopped)
  • 1 large jalapeno (seeded and chopped)
  • 1/4 cup cilantro (chopped)
  • 1 cup pineapple (chopped)
  • 1/2 tsp ground cumin
  • 1 tsp kosher salt
  • Optional: tortilla chips and crumbled goat cheese for serving

Notes

Not a fan of pineapple? Try Mango, its just as sweet and when ripe, is the perfect ingredient to add to guacamole!
