“I love that sandwich” – Chris Mason when he saw me creating this post. That should be enough reason to trust that this is a good one! It may seem like a random combination, but these broiled miso salmon sandwiches are a true winner.

For one of the simplest meals you can have, this broiled miso salmon sandwich is a 10/10 in flavor.

Even if you aren’t a big fan of sandwiches, or carbs for that matter, the salmon alone is a knockout recipe and can be a quick 10 minute meal any night of the week.

This salmon is a staple recipe in our house and I would be lying if I said we didn’t make it every week in our household. I just marinate it the minute I get home from the grocery store, then when we are ready to eat it, we just pull it out of the fridge and broil it for 15 minutes. It’s that simple.

I first saw Ina Garten pair salmon sandwiches in her cook like a pro cookbook and thought it was genius, so i decided to make my own with a little spin. Adding mirin and miso give this salmon the umami flavor all recipes go for and then with the fats from the guac and the salt from the bacon, this is such a comforting and guilt free sandwich.

If you are wondering what mirin is, you are not alone. I only learned about mirin a few years ago when cooking out of a thai cookbook. Essentially, it is similar to sake in just with more sugar and less alcohol content. It is commonly found in most Japanese cooking and is their version of cooking wine. Sort of how we always throw wine into our recipes, is similar to how Japanese cooks throw mirin into theirs. If you haven’t cooked with it yet, I highly recommend using it.

To make this recipe, you start by mixing only 4 ingredients for the marinade. Mirin, miso, garlic and ginger. Let the salmon marinade for an hour, but if you have more time, I recommend marinading overnight. When you are ready to build the sammies, just toast the bread, spread avocado on top, fry up some bacon and broil the salmon. All can be done in under 15 minutes.

If you are trying to cut down on carbs, don’t let this recipe steer you away. Cut out the bread and just make the broiled miso salmon and pair it with some amazing charred broccoli and you have yourself a tasty 15 minute meal!

Broiled Miso Salmon Sandwich

This salmon is bursting with flavor, then topped on a sandwich with guacamole and as much bacon as one desired. Sheer perfection!

Ingredients

Broiled Miso Salmon

  • 1.5 lb Salmon
  • 1/2 cup mirin
  • 1/4 cup white miso paste
  • 1 inch ginger peeled and grated
  • 2 cloves garlic

Sandwich

  • 4 buns Ciabatta or favorite sandwich bread
  • 8 strips bacon

Instructions

  • Start by prepping the salmon. Mix mirin, miso, ginger and garlic in a large ziplock bag or deep dish. Place salmon into the marinade and slosh around to get it coated. Let it sit in the fridge for an hour up to overnight. The longer the better.
  • About 30 minutes before you want to cook the salmon, pull the salmon out of refrigerator to get it to room temperature.
  • Preheat the oven to 350 degrees Fahrenheit. Place the bacon on a sheet pan covered with parchment paper and bake in the oven 20 minutes or until crisp. When the bacon is done, turn the oven to broil. If you don’t have a broil setting, turn the oven to its highest temperature.
  • Place salmon 6 inches under the broiler and bake for 10-12 minutes. It will get a char on top but trust me, it is delicious. When it is done cooking, remove from the oven and let it sit 5 minutes. Then remove the skin from under the salmon by sliding a spatula underneath. I use my fish spatula because it is flexible enough to get under the skin.
  • Toast the ciabatta until crisp. Mash the avocado until its a guacamole consistency and spread over one piece of the bread. Place two slices of bacon on each sandwich and then a sliver of the salmon.

Notes

Kid-Friendly Adaptation: Got a picky eater? I know salmon isn’t the most kid friendly food. This tastes just as good when using chicken breast instead! Just slice in half length wise so it cooks completely in the oven!
