Warm goat cheese stuffed medjool dates smothered in a bourbon glaze. Perfect for a snack, on top of a salad or served with a side of super bowl sunday.
Stuff each date with a tablespoon of goat cheese and wrap with bacon. Use a toothpick to keep the bacon closed and place seem side down in a cast iron skillet or pan.
Once you have all of the dates wrapped, sprinkle the brown sugar over the dates in the pan. Then pour the beer over the brown sugar and dates. Heat on high 3 minutes until starting to bubble, then place in the oven.
Bake 15-18 minutes or until brown, turning halfway through.

Notes
Kid-Friendly Adaptation: Omit the Bourbon and use apple cider instead. Add sliced apples to give it more health. The apples will turn out nice and caramely!
