Easy Herbed Garlic Parmesan Baked Eggs

This is one of those recipes that I feel everyone should learn. 

It’s by far one of my favorite breakfasts to whip up for multiple reasons, but I feel as though the cheesy-ness of the eggs should just be enough of a reason for you to try…

Oh, and did I mention this only takes 10 minutes??

Yeah.

I start by toasting some whole grain bread with vegan mayo in the oven. Whenever I toast bread in the oven by broiling, I use vegan mayo instead of butter, it spreads easier and leaves the bread with a beautiful crust that smells out of this world. 

While the toast is in the oven, i put the butter and cream into individual gratin pans then prep the rest of the ingredients. Once the bread is done, You broil the butter and cream for 3 minutes, that way when you carefully place the eggs in the pans, they begin to cook. Then top with the garlic parmesan mixture and broil to the desired texture.

I prefer my eggs so that the egg whites are cooked all the way and the yolk is nice and runny. This only takes about 5 minutes under the broiler.

This weekend my mom was in town and I decided to make this. By the time I was done baking this dish, it had only taken me 10 minutes total and my mom was stunned. They come out so beautifully and delicious that it’s hard to believe how easy and fast they are to make. 

The toasted bread and cheese smell filled my entire house and made for the most cozy winter morning I’ve had in awhile. 

I of course love pairing eggs in the morning with toasted carbs, however, this would also be great on its own or with some bacon. It’s all delicious. 

Easy Herbed Garlic Parmesan Baked Eggs

This quick and easy recipe takes second to whip up. Just caramelize the butter and cream, crack the eggs on top and broil for the best breakfast!

Ingredients

  • 2 tbsp butter
  • 2 tbsp cream
  • 1/2 cup parmesan shredded
  • 2 tbsp rosemary chopped
  • 2 cloves garlic

Instructions

  • Start by preheating your ovens broiler and place the baking rack 6 inches below the heat. Place four oven safe gratin pans on a baking sheet. If you don’t have gratin pans, you can use a cast iron skillet or any oven safe pan.
  • Place a tablespoon of butter in each gratin pan as well as a tablespoon of cream. Broil for 3 minutes. 
  • While you wait for the butter and cream to broil, carefully crack the eggs in 4 cups so that the yolks don’t break (or they do and you use them anyway). This makes it easier to place them into the grain pans without burning your hands.
  • In a separate bowl, mix together parmesan, rosemary and garlic. Set aside. 
  • When The butter cream is melted and starting to brown, slide the eggs into each gratin pan, then sprinkle the tops of each with the herb garlic parmesan mixture. Broil a remaining 3-5 minutes, depending on how you like your eggs. 
  • Serve immediately with some toasted crusty bread, bacon, asparagus or whatever your heart desires (with caution as the pans will be hot).
