Mix together goat cheese, chili oil, honey, salt and pepper. Taste and adjust seasoning as needed. Roll into 16-20 balls (depending on what size you would like) and place on a baking tray in the refrigerator up to 15 minutes while you get the dipping station ready.
Beat the eggs and a splash of water in a bowl. Add panko crumbs to a separate bowl with some salt and pepper. Add all purpose flour to another plate and season with S+P. This will be your dipping station.
Roll the goat cheese balls in the flour, dip in the egg mixture then cover with breadcrumbs. Shake off any excess breadcrumbs and place back on the baking tray. When finished, place back in the refrigerator for 10 minutes.
When ready to fry add enough canola oil to a dutch oven or heavy bottom cast iron skillet to cover about 3 inches. Heat to 375 degrees. Fry the goat cheese balls 4-5 at a time until golden and crispy, about 3 minutes. Place on a paper towel lined baking sheet to drain, the fry the rest of the balls.
Mix the honey and chili oil together and set aside.
Place the goat cheese balls on a dish to serve, drizzle with the hot honey and sprinkle with flaky sea salt. Serve and enjoy!

Kid Friendly Adaptation: Got a picky eater? Just ditch the chili oil and use just the honey. Same great flavor with a less spice!
